Tofu Scramble with Tomato & Spinach

Try this light and easy tofu scramble. It’s rich in plant-based protein and makes for an ideal replacement for eggs in the morning

Make sure to buy organic tofu as non-organic soy products tend to be high in pesticide use and often genetically modified. This is an easy and quick to prepare recipe that will keep you going all morning through until lunchtime.

Cooking time: 5 mins
Serves 1

INGREDIENTS

  • 100g firm organic tofu

  • 1⁄2 onion

  • 1 clove garlic 

  • Turmeric, paprika, cumin, pepper to taste 

  • 1 tbsp extra virgin olive oil

  • 1 clove garlic

  • 2 large handfuls of fresh spinach

  • 1 tomato diced

METHOD

  • In a medium sized frying pan, heat half of the olive oil and sweat the garlic and onion briefly. Add the diced tomato and spinach and cook until the spinach wilts down. Once ready, set aside to add as the filling once the scramble is ready

  • Heat the remaining half of the olive oil in a medium size pan and add tofu and the spices. Allow to cook on a medium heat for about 4-5 minutes and break up the tofu like you would when frying/scrambling eggs in a pan

  • To serve, remove the scramble from the pan and plate up with the veggie mix. Fold through if preferred.
