Kale is a highly nutritious leafy green vegetable that is packed with vitamins, minerals, and antioxidants. It is particularly high in vitamin K, vitamin C, and beta-carotene, all of which have anti-inflammatory properties and may help to protect against chronic diseases. Kale also contains fibre, which is important for digestive health, and is low in calories, making it a great choice for healthy snacking. Additionally, both recipes below use olive oil, which is a healthy fat that may help to lower the risk of heart disease and inflammation.

SPICY KALE CRISPS

INGREDIENTS

  • 1 bunch kale
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Pinch of cayenne pepper
  • Salt, to taste

METHOD

Preheat the oven to 150°C.

Remove the stems from the kale leaves and chop the leaves into bite-size pieces.

In a large bowl, whisk together the olive oil, smoked paprika, cayenne pepper, and salt.

Add the kale to the bowl and toss until the kale leaves are evenly coated with the spice mixture.

Spread the kale in a single layer on a baking sheet lined with parchment paper.

Bake for 10-15 minutes, or until the kale is crispy and lightly browned. Let cool before serving.

SESAME KALE CRISPS

INGREDIENTS

  • 1 bunch kale

  • 2 tbsp sesame seeds
  • Salt, to taste

METHOD
