Butter Bean Hummus

Butter beans are a great source of fibre, protein, iron, and other essential minerals. Lemon is high in vitamin C and antioxidants, which can help improve digestion and boost the immune system. Garlic is known for its anti-inflammatory and anti-bacterial properties, which can help prevent infections and reduce the risk of chronic diseases. The dip is also gluten-free and vegan, making it suitable for people with dietary restrictions.
INGREDIENTS
- 1 can of butter beans, drained and rinsed
- 2 cloves of garlic, peeled and roughly chopped
- Juice of 1 lemon
- 1/4 cup of extra-virgin olive oil
- 1/2 tsp of ground cumin
- Salt and black pepper, to taste
- Fresh parsley or coriander, for garnish
- Water as required
METHOD
In a food processor, blend the garlic with the drained and rinsed butter beans, lemon juice, olive oil, cumin, salt, and pepper until smooth.
Adjust seasoning to taste and add water as required for desired consistency.
Transfer the dip to a bowl and sprinkle with chopped fresh parsley or coriander.
Serve with homemade seeded thins, veggie sticks or as a spread on sandwiches or wraps.
