Apple, Pear and Rhubarb Compote with Cinnamon and Ginger

Rhubarb is low in calories and high in fibre, which can help promote healthy digestion. Apples and pears are packed with vitamins and minerals, such as vitamin C and potassium, which can help boost the immune system and support heart health. They are also very high in pectin which helps support a balanced gut microbiome. Cinnamon and ginger have anti-inflammatory properties and can help regulate blood sugar levels.

INGREDIENTS

  • 2 cups rhubarb, chopped
  • 2 cups apples, chopped
  • 2 cups pears, chopped
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 – 2 tbsp honey or maple syrup
  • 1/4 cup water

METHOD

In a medium-sized saucepan, combine the rhubarb, apples, pears, cinnamon, ginger, honey/maple syrup, and water.

Bring the mixture to a boil over medium heat, stirring occasionally.

Reduce the heat to low and let the compote simmer for 20-25 minutes or until the fruits are soft and tender.

Remove from heat and let the compote cool.

Serve the compote warm or cold. You can enjoy it as is, or pair it with yogurt, porridge, pancakes, or as a topping for your favourite dessert.
