Choc Raspberry Silken Tofu Pots

Serves 2

INGREDIENTS

🌱 300g organic silken tofu⁠
🌱 80g melted 85%+ dark chocolate⁠
🌱 1 tbsp maple syrup, agave or honey⁠
🌱 Fresh raspberries, mint and dark chocolate to garnish⁠

METHOD

🌱 Begin to melt the chocolate over a bain-marie – bring some water to boil in a medium size pan, place a glass/ceramic bowl over the top, break up the chocolate and the allow the heat/steam from the pan to melt the chocolate⁠
🌱 Add the melted chocolate, maple syrup/agave/honey and silken tofu to a food processor and blitz until everything is mixed through⁠
🌱 Decant the mixture into 2-3 small ramekin dishes⁠
🌱 Place in the refrigerator for a few hours before serving⁠
🌱 Serve with fresh raspberries, mint and some dark chocolate shavings⁠
